Pure Heritage is a group of conservation and ecologically minded farmers who are helping to bring back the flavours of the past centuries. We grow cereals that date back as far as 1650 to produce a flour that makes bread great again.
Modern wheat is a miracle of plant breeding science. It now produces high yields of functional flour with high inputs of artificial fertiliser and chemicals often to the detriment of the soil.
Herein lies the rub, the flour is functional in that it bakes fluffy bread but at the expense of any inherent flavour. It also suffers from a very narrow genetic base making it less self reliant in fighting pests and diseases.
The heritage wheats are long strawed wheats often seen in paintings of the time. People in those days worked hard and their diet may have had the equivalent of 2-3 loaves of bread a day. That bread needed to be more compact and nutritious than today's and be tasty and easily digestible. Many people certainly find it is 'gentler' on the stomach which is a bonus as it is hard to resist.
